We Sure Want S'More Of These Keto S'More Fudge Brownie Muffins

Let these low-carb cupcakes transport you straight to a summer campfire with friends! Gooey, sweet and the perfect no sugar added treat by @ketodashapril.

What You'll Need:

- Keto and Co Fudge Brownie Mix (also on Amazon)

- ¾ cup butter (1 1/2 stick), melted

- 3 large eggs, beaten

- Know Brainer Marshmallow

-Parchment paper

What You'll Need for the Graham Crackers:

-2 cups almond flour 

-⅓ cup brown sugar replacer made with Wondrose

-2 tsp cinnamon

-1 tsp baking powder 

-1 large egg 

-2 Tbsp butter melted

-1 tsp vanilla extract

-Pinch of salt

Cooking Instructions:

  1. For the keto graham crackers, preheat oven to 300°F
  2. In a large bowl, whisk together almond flour, brown sugar alternative, cinnamon, baking powder, and salt 
  3. Stir in egg, melted butter, and vanilla extract 
  4. Roll out dough as evenly as possible to about 1/8 to 1/4 inch thickness between two pieces of parchment paper
  5. Remove top parchment paper and use a pizza cutter to score into squares of about 2 x 2 inches 
  6. Transfer the bottom parchment paper and graham cracker squares onto a baking sheet
  7. Bake 20 to 30 minutes, until they begin to brown and firm up 
  8. Remove crackers and let cool 30 minutes, then break up along score marks
  9. Return to the warm oven (at 200F) and bake for another 30 minutes.Then let cool completely 
  10. For the fudge brownies, follow instructions on the back of the packaging and bake into cupcake molds, let cool
  11. Once cooled, top with Know Brainer Marshmallow and broil on low for 1 minute until melted and then top it with a graham cracker to enjoy!!
