Bite Into These Chewy Keto Peanut Butter Brownie Sandwiches

We are going nuts about this newest recipe baked and decorated by the amazing Jared Cluck! Grab your glass of nut milk, tea or coffee and let's get snackin'! Enjoy these mouthwatering keto-fied Peanut Butter Brownie Sandwiches. 

What You'll Need: 

- 3 eggs (for brownie mix preparation) 
- 12 Tbsp melted butter 
- 1.5 cups no-stir peanut butter 
- Parchment paper 

Instructions: 

  1. Preheat oven to 350F and line baking sheet with parchment paper 
  2. Melt peanut butter in the microwave and pour into prepared pan. Then, freeze for 60 minutes. Lift frozen peanut butter out of the dish and keep in freezer while preparing brownies
  3. Empty keto brownie mix into a medium bowl
  4. Beat 3 eggs lightly in a small bowl, then add to brownie mix with melted butter or oil. Mix until it's a combined and smooth texture
  5. Pour half of the brownie mixture into greased baking pan or parchment paper.  Add frozen peanut butter on top of the brownie mix. Then pour the remaining batter on top and smooth out.
  6. Bake for about 35 minutes. Let cool before evenly slicing into squares 
  7. Optional: Top with melted chocolate, peanut butter, and flaky sea salt

Keto Cinnamon

Keto Cinnamon "Sugar" Cake Doughnuts

Doughnut worry, be happy! Yet again, Jared Cluck baked something special and delicious. This time it's his homemade Keto Cinnamon "Sugar" Cake doughnuts using our Vanilla Keto Cake Mix!

What You'll Need: 

- 1 package of Keto and Co Vanilla Keto Cake Mix (also on Amazon)

- 6 Tbsp butter, browned

- 4 eggs

- 1/2 tsp cider vinegar 

- 2 tsp cinnamon 

- 1/4 cup brown erythritol

- 1/4 cup Wondrose (also on Amazon

 Instructions: 

1. Preheat oven to 350 F and grease doughnut tin. Batter will make 9 donuts 

2. Brown the butter: Melt the butter in a light-colored saucepan over medium heat. Swirl the pan occasionally so the butter cooks evenly. Then it will begin to foam. The color will progress from yellow to golden brown to toasty-brown. Once you smell that nutty aroma, take the pan off the heat and transfer to bowl.

3. Beat Keto Cake Mix, eggs, 1 tsp cinnamon and butter in mixing bowl until smooth

3. Let batter sit 30 seconds, then stir in cider vinegar 

4. Empty cake batter into a pastry bag and pipe into doughnut pans.

5. Bake for 18 - 20 min or until top looks dark golden brown. Let cool in pans. 

6. Mix brown and Wondrose sweetener with remaining cinnamon. Brush each doughnut with melted butter then toss in sweetener! 
7. Enjoy!

Keto Peppermint Chocolate Cake Recipe

Keto Peppermint Chocolate Cake Recipe

Jared Cluck just made one of the prettiest cakes we've ever seen! Check out his new cake recipe using our Keto Chocolate Cake Mix and healthy sugar replacer, Wondrose! 

What You'll Need:

Cake:

- 1 Package of Keto and Co's Chocolate Cake Mix (also on Amazon

- 4 eggs, beaten 

- 6 Tbsp browned butter 

- 1/2 tsp cider vinegar 

Frosting:

- 1 block (8 oz.) cream cheese, chilled

- 12 Tbsp butter, set at room temperature 

- 3/4 cup Wondrose (also on Amazon)

- 10 drops liquid vanilla stevia 

- 1 tsp clear vanilla extract

- 6 drops peppermint oil

- 1/2 cup sugar-free peppermint candies, crushed 

- 1/4 cup dark chocolate, chopped 

Instructions: 

1. Preheat oven to 350 F and grease or line an 8" cake pan

2. Beat cake mix, eggs and butter in mixing bowl until smooth

3. Let batter sit 30 seconds, then stir in cider vinegar

4. Spread batter evenly in prepared pan or cupcake tin 

5. Bake until lightly browned: 15-20 minutes for cupcakes, 25-30 minutes for cakes

6. Let cool completely in pan before removing and frosting  

7. Using mixer, blend butter until it's soft and creamy. Add vanilla, peppermint oil, liquid stevia, cream cheese and whip. Then, add 3/4 cup Wondrose and 1/2 of crushed peppermint candies 

8. Layer cakes (optional) with frosting and cake mix

The cake will be soft when removed from the oven. This is normal. It will firm as it cools. Store mix in a cool, dry place. Refrigerate or freeze the cake.

Keto Banana Caramel Muffin Doughnut Recipe

Have a delightfully low-carb morning with these beautiful and flavorful doughnuts made with Keto and Co's Banana Caramel Muffin Mix! Enjoy this recipe created by Erica Norton - Keto by Design.

What You'll Need: 

- 1 Package of Keto and Co's Banana Caramel Muffin Mix (also on Amazon

- 1/2 tsp cider vinegar (muffin preparation) 

- 4 large eggs (muffin preparation) 

- 6 Tbsp butter (3/4 stick), melted (muffin preparation)

- 1/3 powdered sugar substitute

- 3 tbs sugar-free caramel syrup (suggested ChocZero)

- 3 tbs heavy whipping cream  

- Doughnut pan 

- Air Fryer 

Instructions: 

1. Preheat oven to 350 F and grease or line doughnut pan. The batter will make 9 servings 

2. Beat muffin mix, eggs, and butter in mixing bowl until smooth 

3. Let batter sit 30 seconds, then stir in cider vinegar 

4. Spread batter evenly in a prepared doughnut pan

5. Bake until lightly browned, about 20 minutes 

6. Let cool and pop out of doughnut mold. Air fry doughnut for 3 minutes at 350 F. Flip halfway through. *This is what gives them the fried doughnut taste and feel*

7. Cool once more and begin frosting mix. Add 1/3 cup of your favorite powdered sugar substitute, caramel syrup, and heavy whipping cream. Mix and drizzle on to trees.

Keto Shortbread Cookies with Chocolate and Pistachios

Enjoy this delicious and keto-friendly chocolate and pistachios shortbread cookie recipe created by Jared Cluck. They're really as delicious as they look!

What You'll Need: 

- 1 package of Keto and Co's Shortbread Cookie Mix (also on Amazon

- 1 cup butter (2 sticks), softened (for Keto Shortbread Mix)

- 1 large egg, beaten

- 4 oz dark chocolate, chopped (suggested: Lily's)

- 1 Tbsp coconut oil 

- 1/2 pistachios, roughly crushed 

- Parchment paper and rolling pin

Instructions: 

1. Preheat oven to 350 F and grease or line a baking sheet 

2. Combine cookie mix, butter, egg in a medium mixing bowl and stir until smooth dough forms

3. Let dough sit for 30 seconds. 

4. Roll dough between 2 sheets of parchment paper to 1/4" thick

5. Cut into 16 3-inch rounds and place on baking sheet 

6. Bake for 10-25 minutes or until edges are lightly brown

7. Let cookies cool before dipping. Melt chocolate and coconut oil in a double broiler or microwavable bowl until smooth

8. Dip corner into chocolate then gently place on parchment paper 

9. Sprinkle crushed pistachios on the same side as chocolate

10. Let cookies harden before serving

*Refrigerate or freeze leftover cookies for the best texture.

How to Make Keto Santa Hat Cupcakes!

Santa is coming to town! We're drooling over this delicious holiday treat that our taste buds just can't resist. These Keto Santa Hat Cupcakes are fun and sweet desserts that the kid in you will love and won't bust your low carb diet! 

What You'll Need: 

- Electric mixer 

Buttercream Frosting: 

- 1 package of Keto and Co's Buttercream Keto Frosting Mix (also on Amazon)

- 1 Tbsp lemon juice or 1/2 Tbsp cream of tartar 

- 1 1/2 cup butter (3 sticks), softened 

- 1 Tbsp vanilla extract 

- 1/4 tsp salt

Vanilla Cake: 

- 1 package of Keto and Co's Vanilla Keto Cake Mix (also on Amazon)

- 4 large eggs 

- 6 Tbsp butter (3/4), melted 

- 1/2 tsp cider vinegar 

- 9 whole strawberries 

Instructions: 

1. Preheat oven to 350 F and grease cupcake tin. Batter will make 9 cupcakes 

2. Beat cake mix, eggs, and butter in mixing bowl until smooth

3. Let batter sit 30 seconds, then stir in cider vinegar 

4. Pour batter evenly between 9 cupcake molds

5. Bake until lightly browned: 15-20 minutes for cupcakes

6. Let cool completely in pan before removing and frosting 

7. Combine frosting mix and 5 Tbsp water in a small saucepan to make a thick paste 

8. Cook mixture over low heat, stirring constantly until it becomes smooth, thick, and white and edges begin to bubble (190-200 F). Remove from heat 

9. Add lemon juice or cream of tartar and stir to combine. Cover and cool to room temperature 

10. In a large mixing bowl, combine butter, vanilla and salt with an electric mixer 

11. Add frosting mixture to butter mixture and whip until light and smooth, scraping sides of bowl occasionally 

12. Frost cooled cupcakes and cut off the head of strawberries (removing leaves) and place strawberry upside down on the cupcake (see picture for reference) 

13. Top strawberries with a small amount of frosting to make a pom-pom on the hat.
