The Ultimate Low Carb Veggie Sandwich

This sandwich is layered with flavor and packed with veggies, making it the perfect lunch option! Even better, you can make a whole batch of flatbread slices and enjoy a refreshing, crunchy and nutritious meal every day of the week! Recipe + photo by @fit_jade


What You’ll Need:

-1 package of Keto and Co Keto Flatbread and Pizza Mix

-4 tbsp butter, melted

-1 egg

-1/4 cup egg whites

-1 cup warm water

-1 cup spinach

-1/4 carrot, grated

-1/4 cucumber, sliced

-1 thick slice of tomato

-1/2 avocado, sliced

-Everything bagel seasoning

-2 tbsp Trader Joe's creamy cauliflower jalapeño dip


Cooking Instructions:

  1. In a large bowl, combine Keto and Co Flatbread mix, melted butter, egg, egg whites, and water to form a dough. 
  2. Roll out dough between 2 sheets of parchment paper into a large rectangle. Transfer parchment paper to a baking sheet. Use a knife to mark 12 squares. Let sit at room temperature for an hour.
  3. Bake at 350F for 15 minutes or till golden brown.
  4. To assemble the sandwich, take two squares and toast briefly in an air fryer.
  5. Layer spinach, carrot, cucumber, tomato, and avocado. Sprinkle bagel seasoning on avocado.
  6. Wrap sandwich in parchment paper, and slice diagonally. 
  7. Serve with jalapeño dip (alternatively, you can spread this on the bread before assembling).

What You’ll Need:

-2.5 cups Keto and Co Pancake and Waffle Mix 

-2 eggs

-1/3 cup milk

-2 Tbsp melted butter

-1/3 cup sour cream

-1/3 cup Wondrose Sugar Replacer

-1 tsp vanilla extract

-1/4 tsp salt


Cooking Instructions: 

  1. Preheat the oven to 375 degrees and line an 8X8 baking tin (we recommend using cling wrap to press it down even because the batter will be very thick)
  2. In a medium bowl, whisk together all of the ingredients and pour batter into the baking tin evenly.
  3. Bake for 20 minutes, let cool completely and top with your favorite low carb frosting!

What You’ll Need:

For Donuts:

-1 bag of Keto and Co Vanilla Cake Mix 

-4 eggs

-6 tbsp melted butter

-½ tsp cider vinegar

-1 ½ Tbsp apple pie spice

-½ Tbsp apple cider vinegar

-2 full vials of apple cider extract

-Donut baking mold


For Coating:

-½ cup Wondrose Sugar Replacer

-1 tsp cinnamon 

Cooking Instructions: 

  1. Preheat the oven to 350 degrees and grease donut mold. 
  2. In a medium bowl, beat together Keto and Co Cake Mix, eggs, and butter until smooth.
  3. Let batter sit for 30 seconds, then add in cider vinegar, apple cider vinegar, apple pie spice, and apple cider extract. 
  4. Pour batter evenly into donut mold and bake for 20 minutes.
  5. While donuts are baking, whisk together your Wondrose and cinnamon. 
  6. Once donuts are cooled, coat either side in the Wondrose and cinnamon mixture and enjoy!

As one of four children, my mom was always running around cleaning up after us, feeding us, and making sure our homework was done. Amongst all of that chaos, her baking is something that I always look back on fondly. In order to get us to eat more fruits, I remember her making banana bread for us ALL THE TIME. One of my brothers and I were HUGE banana fans, so when my mom made her special Banana Crumb Cake, our lives were made.  There's truly not a better treat that makes me think of my childhood more than banana bread. Now many years later, I thought it was time I ketofy one of my favorite childhood desserts. I hope my mom loves it just as I loved hers! By @cleaneaterr


Keto Banana Crumb Cake Recipe

What You’ll Need for Cake:

- 1 bag of Keto and Co Banana and Caramel Muffin Mix

- 1 stick of butter, melted/ browned

- 3 eggs 

- 2 tbsp almond milk 

- 1/4 cup walnuts 

- 1/2 tsp cinnamon

 

What You’ll Need for Crumbs:

- 1 cup almond flour

- 3 tbsp monk fruit sweetener

- 1 tbsp cinnamon

- 5 tbsp (1/3 cup) butter, browned

- 1/2 tsp pf of instant espresso powder (optional)

- 1/4 - 1/2 cup chopped walnuts (optional) 


Cooking Instructions:

  1. Preheat your oven to 350F and pour 3 cups of your Keto & Co Banana Caramel Muffin Mix (about 1/2 the package)  in a medium to large bowl. 
  2. Melt 1 stick of butter and let it cool off to the side. While it is cooling crack your 3 eggs into the bowl.
  3. Add your 2 tbsp of almond milk and mix together. If your butter is cool, pour into your bowl. Combine well.
  4. Add 1/2 tsp of cinnamon and then your walnuts. Fold to combine everything. 
  5. Place your batter in an 8x8 inch nonstick pan.
  6. To make the crumbs - In a separate medium bowl pour 1 cup of almond flour and 3 tsp monk fruit sweetener. Combine gently with your spoon or fork. 
  7. Melt and brown 1/3 cup of butter in a pan on your stovetop. Once you see brown speckles, that means it is done. Pour into your dry flour mixture.
  8. Stir and add your cinnamon, and 1/2 tsp of instant espresso powder. 
  9. Once the crumbs start to thicken you can use your hands to combine or a fork. 
  10. Add 1/4-1/2 cup of chopped walnuts to your crumbs and work into the dough. 
  11. Evenly sprinkle your crumbs all over your banana bread batter and place in your oven for about 35-40 minutes
  12. Make sure it is completely cooked through (the edges are firm and a toothpick comes out clean)
  13. Let it cool for a few minutes. Then slice and enjoy!

Easy and Homemade Keto Pumpkin Roll Recipe

What You’ll Need for the Cake:

-1 package of Keto and Co Vanilla Cake Mix

-6 tbsp unsalted browned butter

-3 eggs

-2/3 canned pumpkin puree

-1 tsp ground cinnamon 

-1 tsp vanilla extract

-1/2 tsp apple cider vinegar 


What You’ll Need for the Filling: 

-8 ounces of cream cheese

-2 tbsp of butter softened

-1 tsp vanilla extract

-1/2 cup Wondrose Sugar Replacer

Cooking Instructions: 

  1. Preheat the oven to 375 degrees and line a jelly roll pan with parchment paper. Set aside.
  2. In a medium bowl, whisk together Keto and Co Cake Mix, eggs, melted butter. Make sure your melted butter is cooled slightly before adding in with your eggs. 
  3. Combine apple cider vinegar, vanilla extract, cinnamon, pumpkin puree and whisk until smooth.
  4. Pour batter into the pan and bake for 15 minutes.
  5. When done, place on a cooling rack and let cool completely.
  6. To prepare the filling, combine all filling ingredients in the bowl of a stand mixer and beat until light and fluffy.
  7. Gently spread cream cheese mixture onto the cake.
  8. Roll the cake up again carefully, and wrap tightly in plastic wrap.
  9. Allow the cake to chill in the fridge for 1 hour.
  10. Remove plastic wrap and dust cake with powdered sugar. Slice, serve and enjoy!

Keto Caramel Banana Nut Loaf with Bourbon Salted Caramel

What You’ll Need for Bread: 

-1 bag of Keto and Co Banana Caramel Mix

- 4 eggs

- 6 Tbsp unsalted butter, melted

-½ tsp apple cider vinegar

-¼ cup pecans, toasted


What You’ll Need for Caramel: 

-⅓ cup unsalted butter, browned

3 Tbsp. Wondrose Sugar Replacer

1 tsp bourbon

⅔ cup heavy cream

1 tsp vanilla extract


Cooking Instructions:

  1. Preheat the oven to 350F.
  2. Line a loaf pan with parchment paper and grease with butter or cooking spray.
  3. In a mixer fitted with a whisk or paddle attachment, add all the bread ingredients until well combined.
  4. Bake for 25 minutes. Reduce heat to 300F. and cook for another 10-15 minutes or until a toothpick can be inserted and removed clean from the center.
  5. Set aside and let cool completely.
  6. For the caramel, brown the butter by cooking low and slow for about 30 minutes on the stove top, then strain. 
  7. Melt the browned butter and Wondrose together on medium-low for 3 minutes. Stir it every now and then with a whisk. But for the most part, leave it alone. Watch it so it doesn’t burn.
  1. Turn off the heat and add the bourbon. Stir for one minute to cook off the alcohol so your cream doesn’t curdle
  2. Add in the heavy cream and simmer for 12 minutes on low heat. The mixture will become caramel colored.
  3. Once complete, pour caramel over top of the bread and sprinkle with your favorite sea salt and toasted pecans and ENJOY!
