Healthy Swaps: Keto "Lunchables" Recipes For Your Kids

What is it about finger food in a box that makes it taste THAT much better?! We created four keto-friendly Lunchables that you can feel good about feeding to your kiddos at your next summer picnic or road trip! Everything from pepperoni pizzas to breakfast sandwiches to dessert pizzas (yes, we went there), these keto Lunchables are as easy to pack up as they are to eat!

Keto Pizza "Lunchables"

What You'll Need:

- 1 package of Keto and Co Flatbread and Pizza Mix (also on Amazon)

- 2 eggs

- 4 tbsp butter

- 3 slices of pepperoni (per flatbread round)

- 1 Tbsp Shredded cheese of your choice (per flatbread round)

- 1 Tbsp pizza sauce of choice (per flatbread round)

Cooking Instructions:

  1. Combine full package of Keto and Co Flatbread and Pizza Mix, 1 cup of lukewarm water, 4 tbsp of butter, and eggs in a medium bowl until smooth dough forms
  2. Roll out dough between two sheets of parchment paper to about a ¼ - ⅓  inch thin
  3. Cut dough into 12 4" circles using a cup or cookie cutter
  4. Place on baking sheet and let rise for 1 hour for best flavor
  5. Bake for 15 minutes
  6. While your dough is baking, portion out your pepperoni, cheese, and sauce to your liking
  7. Once the dough is ready, assemble your mini pizzas and enjoy! 

 

 

Keto Brunchables: Bacon, Egg, and Cheese Sandwich

What You'll Need:

- 1 Package of Keto and Co Flatbread and Pizza Mix (also on Amazon)

- 3 eggs ( 2 eggs for Flatbread, 1 egg per prepared flatbread round)

- 4 tbsp butter

- 2 slices of bacon (per flatbread round)

- 1 slice of cheese of your choice (per flatbread round)

Cooking Instructions:

  1. Combine full package of Keto and Co Flatbread and Pizza Mix, 1 cup of lukewarm water, 4 tbsp of butter, and eggs in a medium bowl until smooth dough forms
  2. Roll out dough between two sheets of parchment paper to about a ¼ - ⅓  inch thin
  3. Cut dough into 12 4" circles using a cup or cookie cutter
  4. Place on a baking sheet and let rise for 1 hour for best flavor
  5. Bake for 15 minutes
  6. Cook egg and bacon to your liking
  7. Assemble low carb breakfast sandwich using two flatbread rounds or by cutting one round in half and enjoy! 

 

Keto Meat and Crackers Lunchables

What You'll Need:

- 1 Package of Keto and Co Flatbread and Pizza Mix (also on Amazon)

- 1/4 cup Keto and Co Chocolate Sea Salt Keto Granola (also on Amazon

- 2 eggs

- 4 tbsp butter

- 6-12 slices of Salami (1-2 pieces per small flatbread round)

- 6 small slices of the cheese of your choice (1 piece per small flatbread round)

Cooking Instructions:

  1. Combine full package of Keto and Co Flatbread and Pizza Mix, 1 cup of lukewarm water, 4 tbsp of butter, and eggs in a medium bowl until smooth dough forms
  2. Roll out dough between two sheets of parchment paper to about a ¼ - ⅓  inch thin
  3. Cut out your dough into 2" circles using a small cup to be cracker sized. Makes around 24 crackers.
  4. Place on baking sheet and let rise for 1 hour for best flavor
  5. Bake for 15 minutes. Leave in longer if you'd like a crispier cracker.
  6. While the dough is baking, portion out your salami, cheese, and Keto and Co Chocolate Sea Salt Keto Granola to your liking.
  7. Once dough is finished, place 6 crackers and 6 pieces of salami and cheese into your container. Add granola as a sweet snack on the side and enjoy!

  

 

Keto Dessert Pizza Lunchable

What You'll Need:

- 1 Package of Keto and Co Flatbread and Pizza Mix (also on Amazon)

- 1 Tbsp Keto and Co Chocolate Sea Salt Keto Granola per flatbread round (also on Amazon)

- 2 eggs

- 4 tbsp butter

- 1 Tbsp of melted keto-friendly chocolate bar or chips of your choice (per flatbread round)

- 1 strawberry, sliced (per flatbread round)

Cooking Instructions:

  1. Combine full package of Keto and Co Flatbread and Pizza Mix, 1 cup of lukewarm water, 4 tbsp of butter, and eggs in a medium bowl until smooth dough forms
  2. Roll out dough between two sheets of parchment paper to about a ¼ - ⅓  inch thin
  3. Cut dough into 12 4" circles using a cup or cookie cutter
  4. Place on baking sheet and let rise for 1 hour for best flavor
  5. Bake for 15 minutes
  6. While your dough is baking, melt the chocolate in the microwave or stove top until smooth. 
  7. Once dough is baked, drizzle melted chocolate on dough, add a layer of Keto and Co Chocolate Sea Salt Keto Granola, and top with strawberries!
