Keto Winter Salad with Candied Pecans

What You’ll Need:

- Handful of shredded lettuce

- Handful of Arugula 

- ⅛ cup shredded red cabbage

- ⅛ cup shredded carrots

 

Salad Toppings:

- Handful of cranberries 

- 2 Tbsp edamame 

- 2 Tbsp Pumpkin seeds

- 2 Tbsp Sliced almonds

- 1 Tbsp Sunflower seeds

- Grape tomatoes 


For the Dressing: 

- Sprinkle of oil 

- 1/4 or 1/2 a lemon depending on what you like

- Dash of salt 


For the Candied Pecans: 

- 1 cup whole unroasted natural pecans

- 3 Tbsp butter

- 3 Tbsp Wondrose Sugar Replacer 


Cooking Instructions: 

  1. First make the candied pecans - melt your butter in a large pan over medium-high heat. 
  2. Add Wondrose and stir until dissolved.
  3. Add pecans, reduce heat to medium, and gently toss pecans until toasted (about 5 minutes)
  4. Watch the pecans closely, they can burn quickly. 
  5. Transfer pecans to a plate and let cool.
  6. While the pecans are cooling, add lettuce and arugula or kale to a medium bowl. 
  7. Add shredded carrot and cabbage as well as the rest of the toppings you prefer. 
  8. Top with your desired amount of candied pecans. 
  9. For the dressing, drizzle your olive oil, squeeze your lemon and sprinkle some salt and enjoy!
  10. You will have leftover pecans - break them up and store in an airtight container in the fridge.

 

 

Low Carb Holiday Veggie Wreath with Dill Dip

What You’ll Need for the Dill Dip:

-1/2 cup full fat sour cream

-1/2 cup mayo

-1 tsp dill

-1/2 tsp garlic powder

-1/2 tsp onion powder

-1/2 tsp parsley

-¼ cup chives, thinly chopped

-salt and pepper to taste

What You’ll Need for the “wreath”:

-Cherry tomatoes

-Cauliflower

-Green beans

-Broccoli

-Kale

Cooking Instructions:

  1. First make your keto dill dip, combine all of the ingredients in a serving bowl and let chill in the fridge until ready to be served. 
  2. Arrange all of your veggies as you like on a large plate and leave room in the middle for the dip.
  3. Place the dip in the middle of the plate and enjoy! 

 

 

 

Keto Cucumber Bacon Stuffed Cherry Tomatoes

What You’ll Need:

-24 cherry tomatoes

-3 oz of cream cheese, softened (6 tbsp)

-2 tbsp of mayonnaise 

-¼ cup seeded and peeled cucumber, finely chopped

-¼ cup cooked bacon, finely chopped

-2 tbsp chives, thinly chopped

-1/2 tsp garlic powder

-1/2 tsp dill

-salt and pepper to taste

 

Cooking Instructions:

  1. Cut a small slice off the top of each cherry tomato and scoop out the guts of each. 
  2. In a small bowl, mix together the cream cheese, mayonnaise, cucumber, bacon, chives, garlic powder, dill, salt and pepper. Adjust seasonings as needed. 
  3. Fill each tomato with the mixture and enjoy! 

 

 

Low Carb Smoked Salmon Bites

What You'll Need:

- 1 Package of Keto and Co Flatbread and Pizza Mix (also on Amazon)

- 2 eggs

- 4 tbsp butter

- 8 oz cream cheese, softened

- ½ cup sour cream

- 12-16 oz smoked salmon slices

- ½ tsp garlic powder

- Zest of one lemon

- ½ tsp of salt

- ¼ cup chives

- Butter

 

Cooking Instructions:

  1. Combine Keto and Co Flatbread and Pizza Mix, 1 cup of lukewarm water, 4 tbsp of butter, and eggs in a medium bowl until smooth dough forms
  2. Separate dough into 3 even parts
  3. Roll out dough between two sheets of parchment paper to about a ¼ inch thin
  4. Place on baking sheet and let rise for 1 hour for best flavor (optional)
  5. Bake each one for 15 minutes. 
  6. While your dough is baking, combine cream cheese, sour cream, lemon zest, garlic powder, salt, and chives in a bowl and set aside.
  7. Once all flatbreads are baked, take the first one and spread half of the filling on it in the shape of a square.
  8. Top with half of the smoked salmon slices.
  9. Then, thinly spread the next flatbread with butter and place it butter side down onto the salmon. 
  10. Repeat these steps with remaining flatbread, spread, salmon and butter.
  11. Press down lightly with a flat object to smooth the surface and cover with saran wrap and refrigerate for 4 hours so the filling sets.
  12. Trim edges to make one large square with a serrated knife. Be careful not to cut straight down as the filling may squirt out, cut in a back and forth motion. 
  13. Cut the large square into 6 even strips, then each of those strips into squares. Stick toothpicks in each to hold together and serve with wedges of lemon for a garnish! Makes around 18 small smoked salmon bites.

 

Low-Carb Baked Brie

What You'll Need:

-1 bag of Keto and Co Chocolate Flatbread and Pizza Mix

-4 tbsp of butter

-2 eggs

-1 cup shredded mozzarella cheese

-1 tbsp fresh rosemary, and some for garnish

-16oz wheel of Brie of your choice

-Walnuts 

-Black pepper

-Sugar-free maple syrup of your choice

Cooking Instructions:

  1. Preheat the oven to 350 degrees. 
  2. Combine Keto and Co Flatbread Mix, 1 cup lukewarm water, butter, eggs, shredded mozzarella and 1 tbsp fresh rosemary in a medium mixing bowl and stir until smooth dough forms.
  3. Once dough is smooth, form it around your wheel of brie.
  4. Bake at 350 for 15 minutes, then up it to 425 for 5-10 minutes or until the top is a little browned.
  5. Once it’s toasted, top with walnuts, remaining rosemary, black pepper and sugar-free maple syrup of your choice!
