Banana Caramel Keto Cake Roll

What You’ll Need for the Cake: 

-1 bag of Keto and Co Banana Caramel Muffin Mix

-4 eggs 

-6 Tbsp butter, melted 

-1/2 tsp apple cider vinegar 

-1 tsp vanilla extract

-Jelly roll pan 

 

What You’ll Need for the Filling: 

-1/2 cup Wondrose Sugar Replacer 

-8 oz of cream cheese

-2 Tbsp butter, softened 

-1 tsp vanilla extract

 

Cooking Instructions:

  1. Preheat the oven to 375 degrees and line a jelly roll pan with parchment paper. Set aside.
  2. In a medium bowl, whisk together Keto and Co Banana Caramel Muffin Mix, eggs, and melted butter. Make sure your melted butter is cooled slightly before adding it with your eggs. 
  3. In a separate bowl, combine apple cider vinegar and vanilla extract, and whisk until smooth. Fold into cake batter.
  4. Pour batter into your baking pan and bake for 15 minutes.
  5. When done, place on a cooling rack and let cool completely.
  6. To prepare the filling, combine all filling ingredients in a bowl and beat with an electric mixer until light and fluffy.
  7. Gently spread filling onto the cake.
  8. Roll the cake up carefully using parchment paper instead of your hands to touch the cake and wrap tightly in plastic wrap.
  9. Allow the cake to chill in the fridge for 1 hour.
  10. Remove plastic wrap. Slice, serve and enjoy!
