Low Carb Smoked Salmon Bites

Think bagel and lox meet tea party sandwiches. Best part? These smokey bites aren't just for special occasions. Eat them as a quick snack between video calls or feed them to the kiddos for lunch!

What You'll Need:

- 1 Package of Keto and Co Flatbread and Pizza Mix (also on Amazon)

- 2 eggs

- 4 tbsp butter

- 8 oz cream cheese, softened

- ½ cup sour cream

- 12-16 oz smoked salmon slices

- ½ tsp garlic powder

- Zest of one lemon

- ½ tsp of salt

- ¼ cup chives

- Butter

 

Cooking Instructions:

  1. Combine Keto and Co Flatbread and Pizza Mix, 1 cup of lukewarm water, 4 tbsp of butter, and eggs in a medium bowl until smooth dough forms
  2. Separate dough into 3 even parts
  3. Roll out dough between two sheets of parchment paper to about a ¼ inch thin
  4. Place on baking sheet and let rise for 1 hour for best flavor (optional)
  5. Bake each one for 15 minutes. 
  6. While your dough is baking, combine cream cheese, sour cream, lemon zest, garlic powder, salt, and chives in a bowl and set aside.
  7. Once all flatbreads are baked, take the first one and spread half of the filling on it in the shape of a square.
  8. Top with half of the smoked salmon slices.
  9. Then, thinly spread the next flatbread with butter and place it butter side down onto the salmon. 
  10. Repeat these steps with remaining flatbread, spread, salmon and butter.
  11. Press down lightly with a flat object to smooth the surface and cover with saran wrap and refrigerate for 4 hours so the filling sets.
  12. Trim edges to make one large square with a serrated knife. Be careful not to cut straight down as the filling may squirt out, cut in a back and forth motion. 
  13. Cut the large square into 6 even strips, then each of those strips into squares. Stick toothpicks in each to hold together and serve with wedges of lemon for a garnish! Makes around 18 small smoked salmon bites.

 

 

Keto Flatbread Bruschetta

What You'll Need:

- 1 Package of Keto and Co Flatbread and Pizza Mix (also on Amazon)

- 2 eggs

- 4 tbsp butter

- 2 cups chopped tomatoes

- ½ lb fresh mozzarella, thinly sliced

- 2 tbsp chopped basil

- 1 tbsp extra virgin olive oil

- 1 tbsp balsamic vinegar

- ½ tsp salt

- ¼ tsp pepper or more to taste

 

Cooking Instructions:

  1. Combine Keto and Co Flatbread and Pizza Mix, 1 cup of lukewarm water, 4 tbsp of butter, and eggs in a medium bowl until smooth dough forms
  2. Roll out dough between two sheets of parchment paper to about a ¼ - ⅓  inch thin
  3. Cut out your small toasts in the shape and size that you desire (makes about 12 medium size ovals or 16 small rounds)
  4. Place on baking sheet and let rise for 1 hour for best flavor
  5. Bake for 15 minutes. 
  6. While your dough is baking, combine tomatoes, olive oil, vinegar, salt, and pepper in a small bowl.
  7. Once all flatbreads are baked, spoon tomato mixture onto toasts, top with basil, and enjoy!

 

 

Keto Creole Shrimp Avocado Toasts

What You'll Need:

- 1 Package of Keto and Co Flatbread and Pizza Mix (also on Amazon)

- 2 eggs

- 4 tbsp butter

- 1 lb shrimp, peeled and deveined

- 1 tbsp olive oil

- 1 cucumber, sliced

- 1 tbsp creole seasoning or seasoning of choice

- 1 avocado, mashed

- 1 green onion, thinly sliced

- 2 tbsp cilantro

- 1 tbsp lemon juice

- Salt and pepper to taste

 

Cooking Instructions:

  1. Combine Keto and Co Flatbread and Pizza Mix, 1 cup of lukewarm water, 4 tbsp of butter, and eggs in a medium bowl until smooth dough forms
  2. Roll out dough between two sheets of parchment paper to about a ¼ - ⅓  inch thin
  3. Cut out your dough into circles using a small cup or cookie cutter (1 package makes about 16 small rounds)
  4. Place on baking sheet and let rise for 1 hour for best flavor (optional)
  5. Bake for 15 minutes. 
  6. While your dough is baking, cook the shrimp in oil and the creole seasoning. Cook in a preheated (medium-high heat) heavy-bottomed pan/skillet until slightly blackened, about 2-3 minutes per side.
  7. For the avocado layer, mix smashed avocado, green onion, cilantro, lemon juice, and salt.
  8. Once all flatbreads are baked, place cucumber on each piece, follow by adding a dollop of the smashed avocado, add a shrimp, and top with more cilantro!
