Flavorful Low Carb Cubano Skewers

These protein-packed, low-carb Cubano skewers are not only bursting with flavor, but also they are the perfect easy snack or appetizer for all of your summertime shenanigans. Recipe + photo by @ketodashapril


What You’ll Need for Skewers:

-A few slices of ham, cut into strips

-¼ of a block of swiss cheese, cut into cubes

-9 kosher mini dill pickles, cut in half

-Mini wooden skewers 


What You’ll Need for Keto Croutons:

-½ of a bag of Keto and Co Flatbread Mix 

-2 Tbsp of butter

-1 egg

-½ cup lukewarm water

-1 tsp garlic powder

-1/4 cup olive oil

-1/2 cup Parmesan cheese, shredded

-1/2 tsp pepper


Cooking Instructions:

  1. Preheat the oven to 350 degrees
  2. Combine the Keto and Co Flatbread Mix, butter, eggs and water until smooth dough forms
  3. With a parchment paper and rolling pin, flatten dough to 1/4 inch thick
  4. Cut into 1/2 inch cubes, these are the croutons
  5. Bake for 15 mins, set aside and let cool
  6. In a medium bowl combine olive oil, garlic powder, pepper and ¼ cup of Parmesan cheese
  7. Pour in the croutons and mix until fully coated
  8. Bake for another 15 mins. Toss croutons, and add the remaining ¼ cup of Parmesan cheese and bake for another 15 mins and let cool
  9. Once cooled, using mini wooden skewers, add your pickle, your ham (fold your ham back and forth like a folding fan), your swiss cheese, then top with a crouton 
  10. Enjoy!
