
These protein-packed, low-carb Cubano skewers are not only bursting with flavor, but also they are the perfect easy snack or appetizer for all of your summertime shenanigans. Recipe + photo by @ketodashapril
What You’ll Need for Skewers:
-A few slices of ham, cut into strips
-¼ of a block of swiss cheese, cut into cubes
-9 kosher mini dill pickles, cut in half
-Mini wooden skewers
What You’ll Need for Keto Croutons:
-½ of a bag of Keto and Co Flatbread Mix
-2 Tbsp of butter
-1 egg
-½ cup lukewarm water
-1 tsp garlic powder
-1/4 cup olive oil
-1/2 cup Parmesan cheese, shredded
-1/2 tsp pepper
Cooking Instructions:
- Preheat the oven to 350 degrees
- Combine the Keto and Co Flatbread Mix, butter, eggs and water until smooth dough forms
- With a parchment paper and rolling pin, flatten dough to 1/4 inch thick
- Cut into 1/2 inch cubes, these are the croutons
- Bake for 15 mins, set aside and let cool
- In a medium bowl combine olive oil, garlic powder, pepper and ¼ cup of Parmesan cheese
- Pour in the croutons and mix until fully coated
- Bake for another 15 mins. Toss croutons, and add the remaining ¼ cup of Parmesan cheese and bake for another 15 mins and let cool
- Once cooled, using mini wooden skewers, add your pickle, your ham (fold your ham back and forth like a folding fan), your swiss cheese, then top with a crouton
- Enjoy!
