What You'll Need
For the Flatbread:
-2 bags of Keto Flatbread & Pizza Mix
-1 stick butter, softened
-4 eggs
-2 cups lukewarm water
For the Filling:
-1/2 lb deli ham
-1/4 lb pepperoni (or 9 circled of deli meat pepperoni)
-1/2 lb sliced provolone
-1/4 lb sliced mozzarella
-1 cup sweet peppers
-1/4 onion (diced)
-1/4 cup green olives
-1/4 cup pepperoncinis
-2 Tbsp olive oil
Additional seasoning:
-1 tsp dried oregano and basil
-1 clove garlic, minced
-1 Tbsp grated parmesan cheese
Cooking instructions:
- Preheat oven to 350 F
- Combine both flatbread mixes, lukewarm water, butter, and eggs in a medium mixing bowl and stir until smooth dough forms
- Roll dough between 2 sheets of parchment paper to ¼” - ⅓” thick
- Cut flatbread into two separate layers
- Cook each layer in a separate 13x9 pan. Spray your pan and then line with parchment paper
- Bake for 15 minutes
- While this is happening, cook your sweet peppers with onions until tender
- Top one layer of flatbread with ham, pepperoni, provolone, and mozzarella
- Next top the meats and cheese with the cooked sweet peppers and onions
- Then top with olives and pepperoncinis
- Top with second bread layer
- Next baste the top with crushed garlic, olive oil, oregano, and basil. Sprinkle with grated Parmesan cheese
- Place back in the oven and cook for another 10-15 minutes or until golden brown
- Let it cool for at least 5 minutes before slicing and serving
- Enjoy!
