Keto Antipasto Sandwich Squares Recipe

What You'll Need

For the Flatbread:

-2 bags of Keto Flatbread & Pizza Mix

-1 stick butter, softened

-4 eggs

-2 cups lukewarm water

For the Filling:

-1/2 lb deli ham

-1/4 lb pepperoni (or 9 circled of deli meat pepperoni) 

-1/2 lb sliced provolone 

-1/4 lb sliced mozzarella 

-1 cup sweet peppers 

-1/4 onion (diced) 

-1/4 cup green olives

-1/4 cup pepperoncinis

-2 Tbsp olive oil

Additional seasoning:

-1 tsp dried oregano and basil

-1 clove garlic, minced

-1 Tbsp grated parmesan cheese

Cooking instructions:

  1. Preheat oven to 350 F
  2. Combine both flatbread mixes, lukewarm water, butter, and eggs in a medium mixing bowl and stir until smooth dough forms
  3. Roll dough between 2 sheets of parchment paper to ¼” - ⅓” thick
  4. Cut flatbread into two separate layers
  5. Cook each layer in a separate 13x9 pan. Spray your pan and then line with parchment paper
  6. Bake for 15 minutes
  7. While this is happening, cook your sweet peppers with onions until tender
  8. Top one layer of flatbread with ham, pepperoni, provolone, and mozzarella
  9. Next top the meats and cheese with the cooked sweet peppers and onions
  10. Then top with olives and pepperoncinis
  11. Top with second bread layer
  12. Next baste the top with crushed garlic, olive oil, oregano, and basil. Sprinkle with grated Parmesan cheese
  13. Place back in the oven and cook for another 10-15 minutes or until golden brown
  14. Let it cool for at least 5 minutes before slicing and serving
  15. Enjoy!
