Mini Keto Chicken and Waffle Sliders

What You'll Need: 

Cooking Instructions:

  1. Prepare Keto and Co Pancake and Waffle Mix as directed to make 12 mini waffles (see package for instructions). Use approximately 1 1/4 Tbsp per waffle.
  2. Cut each chicken thigh horizontally into 6 evenly sized pieces. If moist, pat them dry with paper towels.
  3. Add 1 to 2 inches of cooking oil to a pot over medium to high heat. Heat the oil to 350F. Frequently monitor to maintain the temperature by adjusting the flame during frying.
  4. In a bowl, add eggs and heavy cream, beating until well-mixed. In another bowl, add NutCrumb breading. Set aside.
  5. Coat each piece first in the nut breading, then in the egg wash, and then in the nut breading again. Shake off excess and carefully lower into the hot oil. Fry until deep brown and cooked through, about 5 minutes and drain on paper towels.
  6. Repeat with the other chicken pieces.
  7. Once chicken and waffles are made, assemble a sandwich with with waffles and a piece of chicken. 
  8. Drizzle favorite sugar-free syrup on the inside or on top.
  9. Stick with toothpick

Sweet and Savory Low-Carb Wing Sauce

What You'll Need:

- ¾ cup soy sauce

- 2 tbsp Wondrose Sugar Replacer (also on Amazon)

- 2 tbsp chili garlic sauce

Cooking Instructions:

  1. Mix together soy sauce, Wondrose and chili garlic sauce
  2. Place chicken in a plastic bag or bowl and cover sauce generously over the chicken.
  3. Let chicken Marinate in this sauce overnight and grill the next day
  4. Enjoy!

Low-Carb Pull-Apart-Pigs In a Blanket

What You'll Need:

-1 package of Keto and Co Flatbread and Pizza Mix

-1 cup water

-2 eggs

-4 tbsp butter (for Keto Flatbread Mix)

-6 tbsp butter, melted

-1 tsp parsley

-1 tsp onion powder

-1 tsp garlic powder

-4 cloves fresh garlic minced

-1 pack of lil smokies

-Parmesan cheese

-Salt to taste

-Pepper to taste

-Your favorite dipping sauce

Cooking Instructions:

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the Keto & Co Flatbread Mix, water, eggs, 4 tbsp butter, and roll out between parchment paper and place in the freezer for 15 min.
  3. Mix together the remaining butter, parsley, onion powder, garlic powder, garlic and salt, and pepper.
  4. Cut the flatbread into strips and brush on some of the butter mix. 
  5. Roll a lil’ smokie in each strip and stand them all up in a springform. Once all rolled, brush the tops with the remaining butter mixture.
  6. Sprinkle some parmesan on the top and bake at 350°F for 30 min and enjoy!

Keto Friendly Buffalo Chicken Meatballs

What You’ll Need for Meatballs:

-1 lb ground chicken

-½ cup almond flour of your choice

-½ cup celery, diced

-¼ cup Franks Red Hot Sauce

-1 egg

-2 tsp parsley

-¾ tsp onion powder

-½ tsp garlic powder

What You’ll Need for Buffalo Sauce:

-1 cup Franks Red Hot

-½ cup salted butter

-½ tsp garlic powder

What You’ll Need for Toppings:

-Blue cheese of your choice

-Blue cheese dressing of your choice (for dipping)

Cooking Instructions: 

  1. Preheat the oven to 375 degrees.
  2. In a large bowl, combine all of the meatball ingredients and stir until well combined. 
  3. Roll the mixture into 1 ¼ - 1 ½ inch meatballs. You should be able to make about 24.
  4. Place the meatballs onto a lined baking sheet and bake for 12-14 minutes. 
  5. In a small saucepan combine all of the ingredients for the sauce. Heat on low, stirring regularly until smooth. Make sure to heat slowly so the mixture doesn’t separate. 
  6. Toss the cooked meatballs in the buffalo sauce, top with blue cheese and enjoy! 

Low Carb Cauliflower Hummus

What You'll Need:

-1 Package of Keto and Co Dry Riced Cauliflower

-2 Cups water

-2 Tbsp avocado or olive oil

-1/2 tsp salt

-3 whole garlic cloves

-1.5 Tbsp Tahini paste

-3 Tbsp lemon juice

-2 raw garlic cloves, crushed (in addition to above)

-3 Tbsp extra virgin olive oil

-3/4 tsp kosher salt

-smoked paprika and extra olive oil for serving

Cooking Instructions:

  1. In a large saucepan, add contents of package, 2 tbsp olive oil, and 2 cups of water
  2. Bring to gentle boil then reduce heat to low
  3. Simmer uncovered until all water is absorbed (15-20 mins)
  4. Put cauliflower mixture into a blender or food processor with tahini paste, lemon juice, 2 raw garlic cloves, 3 tbsp olive oil and 3/4 tsp kosher salt. Blend until mostly smooth.
  5. Serve with a drizzle of extra virgin olive oil and a sprinkle of paprika.
  6. Serve with celery sticks, raw radish chips or other veggies to dip with.
