Keto Friendly Buffalo Chicken Meatball Appetizer

These tender chicken meatballs are juicy, light and easy to make. Bursting with that buffalo flavor just like you remember, these are the perfect side dish or appetizer for your game-day celebrations.  

What You’ll Need for Meatballs:

-1 lb ground chicken

-½ cup almond flour of your choice

-½ cup celery, diced

-¼ cup Franks Red Hot Sauce

-1 egg

-2 tsp parsley

-¾ tsp onion powder

-½ tsp garlic powder

What You’ll Need for Buffalo Sauce:

-1 cup Franks Red Hot

-½ cup salted butter

-½ tsp garlic powder

What You’ll Need for Toppings:

-Blue cheese of your choice

-Blue cheese dressing of your choice (for dipping)

Cooking Instructions: 

  1. Preheat the oven to 375 degrees.
  2. In a large bowl, combine all of the meatball ingredients and stir until well combined. 
  3. Roll the mixture into 1 ¼ - 1 ½ inch meatballs. You should be able to make about 24.
  4. Place the meatballs onto a lined baking sheet and bake for 12-14 minutes. 
  5. In a small saucepan combine all of the ingredients for the sauce. Heat on low, stirring regularly until smooth. Make sure to heat slowly so the mixture doesn’t separate. 
  6. Toss the cooked meatballs in the buffalo sauce, top with blue cheese and enjoy!
