Keto Friendly Funfetti Cake Roll Recipe

What You’ll Need for the Cake:

-1 bag of Keto and Co Vanilla Cake Mix

-4 eggs 

-6 Tbsp butter, melted 

-1/2 tsp apple cider vinegar 

-1 tsp vanilla extract

-Sugar-free sprinkles of your choice


What You’ll Need for the Filling:

-1/2 cup Wondrose Sugar Replacer 

-8 oz of cream cheese

-2 tbsp butter, softened 

-1 tsp vanilla extract


Cooking Instructions:

  1. Preheat the oven to 375 degrees and line a jelly roll pan with parchment paper. Set aside.
  2. In a medium bowl, whisk together Keto and Co Vanilla Cake Mix, eggs, melted butter. Make sure your melted butter is cooled slightly before adding in with your eggs. 
  3. Combine apple cider vinegar, vanilla extract, and whisk until smooth. Add your sprinkles and fold into cake mix.
  4. Pour batter into your baking pan and bake for 15 minutes.
  5. When done, place on a cooling rack and let cool completely.
  6. To prepare the filling, combine all filling ingredients in the bowl and beat with an electric mixer until light and fluffy.
  7. Gently spread cream cheese filling onto the cake.
  8. Roll the cake up carefully using parchment paper instead of your hands to touch the cake and wrap tightly in plastic wrap.
  9. Allow the cake to chill in the fridge for 1 hour.
  10. Remove plastic wrap. Slice, serve and enjoy!
