Keto Friendly Banana Caramel Streusel Muffins

What You’ll Need for Muffins:

-1 bag of Keto and Co Banana Caramel Muffin Mix

-1/2 tsp nutmeg 

-1/2 tsp cinnamon 

-4 eggs

-6 Tbsp butter 

-1/2 tsp apple cider vinegar 

-Handful of walnuts or pecans

-Muffin tin

 

What You’ll Need for Streusel Topping:

-1 cup almond flour 

-3 Tbsp brown erythritol 

-1 Tbsp granulated sweetener of choice

-1/2 tsp baking powder 

-1/2 tsp xanthan gum

-1 tsp cinnamon 

-1/4 tsp salt

-4 Tbsp melted butter 

Cooking Instructions:

  1. To make the muffins, mix keto muffin mix, eggs, butter, nutmeg, and cinnamon until smooth. 
  2. Let the batter sit for 30 seconds then stir in the apple cider vinegar. Set aside.
  3. Now make your streusel topping. In a separate bowl, combine all streusel ingredients with your fingers until crumbly. f it’s too wet add a bit more almond flour
  4. Use a piping bag and pipe the muffin mixture into your muffin tin. 
  5. Press a walnut or pecan into each muffin and top with 1-2 spoonfuls of the streusel mixture. 
  6. Bake at 350°F for about 15 minutes or until the tops have browned and a toothpick comes out clean. 
  7. Let cool in the pan and enjoy!

 

 

Keto Friendly Gingerbread Cupcakes with Cinnamon Cream Cheese Frosting

What You’ll Need for Cupcakes:

-1 package of Keto and Co Vanilla Cake Mix

-2 tsp ground ginger

-1 tsp cinnamon 

-1/2 tsp ground white pepper

-1/2 tsp ground mustard 

-1/4 tsp salt

-1 Tbsp baking powder

-4 eggs

-7 Tbsp butter

-1/2 tsp apple cider vinegar 

 

What You’ll Need for Cinnamon Frosting:

-1 bag of Keto and Co Buttercream Frosting Mix

-½ cup of butter, softened

-1 Tbsp lemon juice or ½ Tbsp of cream of tartar

-1 Tbsp vanilla extract

-½ tsp salt

-1 cup of of cream cheese, softened

-½ tsp of cinnamon

 

Cooking Instructions:

  1. In a large mixing bowl, mix all of the ingredients for the cupcakes together.
  2. Let the batter sit for 30 seconds, then add the apple cider vinegar and fold through gently. 
  3. Bake for 20 min at 350°F in a lined cupcake tin and let cool completely. 
  4. While the cupcakes are baking, prepare the Keto and Co Buttercream frosting. 
  5. Combine frosting mix and 5 Tbsp of water in a small saucepan to make a thick paste.
  6. Cook mixture over low heat, stirring constantly, until it becomes smooth, thick, and the edges begin to bubble (190-200 F). Remove from heat.
  7. Add lemon juice or cream of tartar and stir to combine. Cover and cool to room temperature.
  8. In a large mixing bowl, combine cream cheese, butter, vanilla, cinnamon and salt with an electric mixer.
  9. Add frosting mixture to butter mixture and whip until light and smooth, scraping sides of bowl occasionally. 
  10. Once the cupcakes are completely cool, top with cinnamon frosting and enjoy!

Low Carb Funfetti Cake Pops

What You'll Need:

For Cake:

Keto and Co Vanilla Cake Mix

- 3 Tbsp butter 

- 2 eggs

- ¼ tsp apple cider vinegar

- 1/2 cup sugar free sprinkles of your choice

For Frosting:

-Keto and Co Buttercream Frosting Mix

-1 1/2 cup butter (3 sticks) 

- 1/2 Tbsp cream of tartar OR 1 Tbsp lemon juice 

- 1 Tbsp vanilla extract 

- 1/4 tsp salt 

-Electric Mixer

For Dipping:

-2 bags of your favorite keto-friendly chocolate (white, milk or dark)

Cake Instructions:

  1. Use one package of Keto and Co Vanilla Cake Mix, following the directions on the back
  2. Before baking, add ½ cup of your favorite low carb sprinkles 
  3. Once the cake is baked and cooled, crumble it to resemble bread crumbs and let sit on the counter overnight to stale. You should yield approximately 3 cups of crumbs.

Frosting Instructions:

  1. The day of the assembly, use one package of Keto and Co Buttercream Frosting Mix, following the directions on the back

Assembly Instructions:

  1. Start by adding 3 Tbsp of frosting at a time. The mix should be pliable, holding shape when rolled into balls. It should not stick to your hands. About ⅓ cup of frosting.
  2. Using a small ice cream scooper, scoop cake pop pictures onto wax paper. 
  3. Once done, roll into balls and insert lollipop/Cake Pop Sticks and let chill for two hours.
  4. Melt two bags of keto-friendly white chocolate chips in the microwave or over a double-boiler. Be careful when melting, while chocolate overheats fast.
  5. Dip cake pops into white chocolate and dry standing upright. You can use either a cake pop stand or DIY one with a piece of styrofoam.
  6. Enjoy!
