Trick or Treat or Not - You Can Still Celebrate Halloween at Home With These Deliciously Spooky Keto Desserts

Halloween may look a little different this year but that doesn’t mean your treats have to! Whether you’re having a family trick-or-treat around the house or carving pumpkins with friends over Zoom, we’ve got the perfect low carbs treats for you and the fam to enjoy!

CREEEEPY Cheesecake Brownies

What You’ll Need:

-1 bag of Keto and Co Fudge Brownie Mix

-4 eggs, divided Use

-1 ½ sticks of butter, melted

-¼ cup powdered erythritol (or Wondrose Sugar Replacer)

-1 Tsp vanilla extract

-6oz cream cheese

-Yellow and red food coloring (gel variety works best!)

 

Cooking Instructions:

  1. Preheat your oven to 350
  2. Line a 9” pie plate with parchment paper and set aside.
  3. In a medium bowl add butter, 3 eggs and the entire bag of Keto Fudge Brownie Mix. 
  4. Mix until well blended and pour into the pie plate and lightly tap on the counter to make even.
  5. In a separate bowl add the cream cheese, erythritol, remaining egg, & vanilla. Mix until smooth and creamy. 
  6. Add 2-3 drops of yellow food coloring and 1 drop of red (levels may vary depending on the brand you are using) and mix to your desired orange hue.
  7. Add cream cheese mixture into a piping bag and draw rings on top of the brownie mixture about 4” thick.  
  8. Use a butter knife on the thin edge from center out to create a web like pattern.
  9. Bake for 30-35 minutes. Allow to cool completely before enjoying!

 

 

 

Keto Autumn Leaf Shaped Shortbread Cookies

What You’ll Need:

-1 bag of Keto & Co Keto Shortbread Mix

-1 Egg

-2 Sticks of butter

-Red, Green, & Yellow food coloring (gel variety works best!)

-Leaf shaped cookie cutters

-A small bowl of water


Cooking Instructions:

  1. Preheat the oven to 350.
  2. Prepare cookies according to package directions and divide finished dough into 4 small bowls. 
  3. Color each bowl red, green, yellow and orange (yellow & red). 
  4. On a sheet of parchment drop spoonfuls of dough in a random pattern of color. Roll with a rolling pin to ¼” thick. You should have one big piece of beautifully marbled dough.
  5. Dip cookie cutters into the water bowl and shake off excess (to prevent sticking).  
  6. Bake cut cookies according to package directions on a parchment lined baking sheet (check a few minutes early if the cookies are on the small side).
  7. Cool completely and enjoy!
  8. Edible lustre dust makes a great addition to these in gold to give them extra sparkle!

 

 

Keto Cup-O-Dirt

What You’ll Need:

-1 bag of Keto and Co Shortbread Cookie Mix

-1 bag of Keto and Co Dark Chocolate Decadent Dessert Mix

-Sugar free chocolate chips of your choice

-Black food coloring (gel variety works best)

 

Cooking Instructions:

  1. Prepare Keto and Co Dark Chocolate Decadent Dessert Mix according to package directions and set aside in the fridge.
  2. Prepare Keto and Co Keto Shortbread Mix according to packaging directions & divide into 2 balls. 
  3. Use one ball to form tombstone shapes and bake as directed on the packaging. 
  4. Once cool, pipe RIP in melted chocolate onto the fronts.
  5. To the other ball add black food coloring to preference. Bake in one piece according to package directions and once cool, crumble into “dirt.”
  6. Sprinkle dirt on top of the pudding cups and add a shortbread tombstone. Enjoy!
