Keto Skillet Pancake with Fresh Fruit

Take your weekend keto pancakes up a notch with this baked skillet pancake recipe! Filled with your favorite low carb fresh fruit and cooked to perfection in a cast iron skillet, your pancakes will be fluffier and tastier than ever. Recipe and photo by @ketodashapril 

What You’ll Need:

-½ cup Keto and Co Pancake and Waffle Mix

-3 eggs

-2 Tbsp nut milk or water

-1 Tbsp of oil

-1/4 cup sliced berries 

Cooking Instructions:

  1. Preheat the oven to 375F
  2. Follow the instructions on the back of the Keto and Co Pancake and Waffle packaging
  3. On 6-inch nonstick pan, melt 2 Tbsp of butter
  4. Once the butter has melted, turn off the burner and pour the pancake mix evenly
  5. Top with your favorite low carb fruits (these are our favorites)
  6. Bake for 8-10 mins and enjoy!
