
Made with chayote squash, this crisp slaw is bursting with flavor and perfect as a side or served with a juicy keto pulled pork sandwich. Recipe + photo by @thelowcarbcontessa
What You’ll Need for the Slaw:
-1 head of cabbage, finely shredded
-2 chayote squash, peeled and julienned
-1/4-1/2 cup carrots, shredded
-1/4 cup green onions, sliced
-2 Tbsp fresh parsley, chopped
What You’ll Need for the Dressing:
-2 Tbsp whole grain mustard
-2 Tbsp dijon mustard
-1 Tbsp olive oil
-1/4 cup apple cider vinegar
-Juice of 1/2-1 lime
-1 dropper of Oooflavors Gala Apple Flavor
-2-3 Tbsp Wondrose Sugar Replacer (adjust to how sweet you want your slaw)
-Salt and pepper to taste
Cooking Instructions:
- Add all of the slaw ingredients to a large bowl. Set aside.
- In another bowl add all of the dressing ingredients and stir to mix. Add the prepared dressing to the slaw and toss to combine.
- Cool in the fridge until ready to serve!
