Low Carb Cabbage and Chayote Slaw

Made with chayote squash, this crisp slaw is bursting with flavor and perfect as a side or served with a juicy keto pulled pork sandwich. Recipe + photo by @thelowcarbcontessa

What You’ll Need for the Slaw:

-1 head of cabbage, finely shredded 

-2 chayote squash, peeled and julienned

-1/4-1/2 cup carrots, shredded

-1/4 cup green onions, sliced  

-2 Tbsp fresh parsley, chopped 

 

What You’ll Need for the Dressing:

-2 Tbsp whole grain mustard

-2 Tbsp dijon mustard

-1 Tbsp olive oil

-1/4 cup apple cider vinegar 

-Juice of 1/2-1 lime

-1 dropper of Oooflavors Gala Apple Flavor

-2-3 Tbsp Wondrose Sugar Replacer (adjust to how sweet you want your slaw)

-Salt and pepper to taste

 

Cooking Instructions:

  1. Add all of the slaw ingredients to a large bowl. Set aside.
  2. In another bowl add all of the dressing ingredients and stir to mix. Add the prepared dressing to the slaw and toss to combine. 
  3. Cool in the fridge until ready to serve!
