Low Carb Cauliflower Mac and Cheese with Keto Garlic Knots

What You’ll Need for Keto Garlic Knots:

-1 package Keto and Co Keto Flatbread Mix

-2 eggs

-4 Tbsp butter, softened

-3 Tbsp butter, melted

-3 garlic cloves, minced or 1/2 teaspoon garlic powder

-1 teaspoon Italian Seasoning

-1/4 teaspoon salt

What You’ll Need for Cauliflower Mac and Cheese:

-2 Tbsp butter

-3 Tbsp cream cheese

-1 cup Monterey Jack cheese (shredded)

-1 cup mild cheddar cheese (shredded) + 3/4 cup for the top

-1 head of cauliflower 

-3/4 cup of heavy cream or milk 

-2-3 Tbsp of olive oil

-Salt and pepper


Cooking Instructions for Keto Garlic Knots:

  1. Combine the Keto and Co Flatbread Mix, 1 cup of lukewarm water, 4 Tbsp of butter and eggs into a mixing bowl and stir until smooth dough forms.
  2. Using your hands, shape the dough into a 16 inch log. No need to use a rolling pin because they don’t need to be perfect.
  3. Cut the log into 16, 1-inch strips.
  4. Roll each strip into an 8-inch rope. Tie the rope into a knot. 
  5. Tuck the end of the ropes under. Set aside.
  6. Melt your remaining 5 Tbsp of butter and mix in garlic, Italian seasoning and salt.
  7. Brush garlic butter mixture over each knot.
  8. Baked for 25 mins and enjoy!

 

Cooking Instructions for Cauliflower Mac n Cheese: 

  1. Preheat the oven to 400F.
  2. Cut the cauliflower head into florets - coat with olive oil and season with salt and pepper. Bake for 30 mins.
  3. When slightly golden transfer to a 8x8 baking pan and set aside.
  4. On medium heat, melt the butter and cream cheese.
  5. Add the heavy cream and stir.
  6. Turn heat to low and gradually add in shredded cheese in small amounts. Stir until melted. Season to your liking.
  7. Pour melted cheese over florets and top it with the rest of the cheese. 
  8. Bake for 20-30 mins or until cauliflower is tender and enjoy!
