What You’ll Need for Keto Garlic Knots:
-1 package Keto and Co Keto Flatbread Mix
-4 Tbsp butter, softened
-3 Tbsp butter, melted
-3 garlic cloves, minced or 1/2 teaspoon garlic powder
-1 teaspoon Italian Seasoning
-1/4 teaspoon salt
What You’ll Need for Cauliflower Mac and Cheese:
-2 Tbsp butter
-3 Tbsp cream cheese
-1 cup Monterey Jack cheese (shredded)
-1 cup mild cheddar cheese (shredded) + 3/4 cup for the top
-1 head of cauliflower
-3/4 cup of heavy cream or milk
-2-3 Tbsp of olive oil
-Salt and pepper
Cooking Instructions for Keto Garlic Knots:
- Combine the Keto and Co Flatbread Mix, 1 cup of lukewarm water, 4 Tbsp of butter and eggs into a mixing bowl and stir until smooth dough forms.
- Using your hands, shape the dough into a 16 inch log. No need to use a rolling pin because they don’t need to be perfect.
- Cut the log into 16, 1-inch strips.
- Roll each strip into an 8-inch rope. Tie the rope into a knot.
- Tuck the end of the ropes under. Set aside.
- Melt your remaining 5 Tbsp of butter and mix in garlic, Italian seasoning and salt.
- Brush garlic butter mixture over each knot.
- Baked for 25 mins and enjoy!
Cooking Instructions for Cauliflower Mac n Cheese:
- Preheat the oven to 400F.
- Cut the cauliflower head into florets - coat with olive oil and season with salt and pepper. Bake for 30 mins.
- When slightly golden transfer to a 8x8 baking pan and set aside.
- On medium heat, melt the butter and cream cheese.
- Add the heavy cream and stir.
- Turn heat to low and gradually add in shredded cheese in small amounts. Stir until melted. Season to your liking.
- Pour melted cheese over florets and top it with the rest of the cheese.
- Bake for 20-30 mins or until cauliflower is tender and enjoy!
