Simple Keto Strawberry Snacking Cake

We love any excuse to snack, especially if that snack involves cake! Made with our Keto Vanilla Cake and fresh strawberries, this treat is refreshing and the perfect pair with tea or coffee. Recipe + photo by @alittlemorebalanced


What You’ll Need:

-1 bag of Keto and Co Vanilla Cake Mix

-4 eggs

-6 Tbsp butter, melted

-½ tsp cider vinegar

-1 cup sugar-free whipped cream (this is our favorite recipe)

-1 cup fresh strawberries, cut into quarters

-Handful of fresh strawberries, halved for the topping


Cooking Instructions:

  1. Preheat the oven to 350F 
  2. Beat Keto and Co Vanilla Cake Mix, eggs and butter until smooth. Let batter sit for 30 seconds, then add cider vinegar. 
  3. Fold in 1 cup chopped fresh strawberries.
  4. Transfer dough to a 8x8 pan and bake for 25-30 minutes or until lightly browned. 
  5. Once cooled, spread sugar-free whipped cream and place remaining strawberries on top of the cake and enjoy!
