What You’ll Need:
-1 cup lettuce, chopped
-½ cup red cabbage, chopped
-⅓ cup carrots, chopped
-¼ cup green onions, chopped
-½ cup peanuts
-½ cup chicken, chopped
-Low sugar dressing of your choice (we like this one)
-Mandarin orange slices (optional, 1/2 of Mandarin orange has 4g net carbs)
- Cook the chicken fully, let cool and chop up in bite size pieces.
- In a medium mixing bowl, add lettuce, cabbage, carrots, green onions and peanuts and mix to combine.
