Thai Salad with Keto Peanut Butter Granola

What You’ll Need:

-1 cup lettuce, chopped

-½ cup red cabbage, chopped

-⅓ cup carrots, chopped

-¼ cup green onions, chopped

-½ cup peanuts

-¼ cup Keto and Co Peanut Butter Crunch Granola

-½ cup chicken, chopped

-Low sugar dressing of your choice (we like this one)

-Mandarin orange slices (optional, 1/2 of Mandarin orange has 4g net carbs)

Cooking Instructions:

  1. Cook the chicken fully, let cool and chop up in bite size pieces. 
  2. In a medium mixing bowl, add lettuce, cabbage, carrots, green onions and peanuts and mix to combine. 
  3. Sprinkle Keto and Co Peanut Butter Crunch Granola to cover. 
  4. Toss with dressing of your choice and enjoy!
